Gelato Beginner Course with Chef Matteo Zini

Marubishi Malaysia recently hosted an incredibly successful 2-day Gelato Beginner Course, led by the esteemed Gelato Chef and Iceteam 1927 ambassador, Matteo Zini.

As the owner of the renowned La Macelleria Gelateria in Australia, Chef Matteo brought a wealth of international experience and Italian tradition to our demo kitchen, offering participants a deep dive into the art of artisanal gelato.

The course took attendees from the theoritical aspect of essential gelato science to a practical and truly satisfying hands-on production session.

Here's a snippet of what our aspiring gelato enthusiast participants mastered over the two days.

Laying the Foundations

The course kicked off with the theoritical basics, ensuring all participants had a solid groundwork for the production phase.

Attendees not only learnt the differences between gelato and standard ice cream, Chef Matteo covered all the fundamental elements - the ingredients, the desirable structure, and what makes authentic Italian gelato so uniquely rich and flavourful. 

Understanding Ingredients & Formulation

This segment was a deep dive into the why's behind the recipe. Chef Matteo highlighted the vital role of sugars and stabilizers in crafting perfect gelato.

Participants discovered how these components influence the final product's taste, texture, and shelf life.

Chef Matteo guided participants on how to formulate gelato recipes from scratch, explaining the principles of balancing the ingredients.

This moved the class beyond basic measurements to understand the precise function and proper percentage of each component, ensuring they could create their own stable and balanced gelato base tailored to specific flavor profiles and textures.

Then, it was all about putting theory into practice, for attendees to get familiar with professional equipment, and, of course, making delicious gelato!

Gelato Production & Equipment

Chef Matteo did an introduction to professional gelato machinery, including the top-tier Cattabriga gelato machines from Iceteam 1927, the company Chef Matteo proudly represents.

He guided the class through a step-by-step production outline and shared key gelato techniques, from initial preparation to final freezing, emphasizing best practices for efficiency and quality.

Beyond the basics, Chef Matteo also shared insights into current gelato trends, emphasizing innovation both in flavour and presentation.

As a demonstration, he showcased how to make a Chocolate Gelato, which was then creatively layered with crunchy Pistachio Kunafa - a perfect example of blending Italian quality with trendy inspirations.

Hands-On Session

Chef Matteo engaged attendees for lots of fun and practical hands-on sessions. Participants had the chance to work alongside Chef Matteo to create their own batches of authentic gelato.

From the very first mixing stage...

Right through to pasteurizing, churning, and gelato extraction...

Chef Matteo even shared crucial tips on gelato extraction, demonstrating how to achieve that signature artistic presentation for the display case.

They worked with both milk and water bases, gaining practical experience in balancing different formulas and handling the equipment.

Chef Matteo's expertise, honed through years of practice in Italy and his successful venture, La Macelleria Gelateria, provided an unparalleled learning experience.

His passion for high-quality, artisanal gelato definitely inspired our fellow participants. They're now equipped with the foundational knowledge to start their own gelato journey.

The best part of all that hard work? Getting to taste the gelato demonstrated by Chef Matteo and even those created by the participants themselves!

Everyone was treated to an abundance of delicious, freshly churned artisanal gelato. It was a sweet reward and the perfect way to truly appreciate the high-quality gelato achievable with the right techniques and equipment!
