The Mondial du Pain, which translates to "World of Bread," is a prestigious, international baking competition held every two years in France. This competition is known as the "Olympics of baking" as it is a testament to the highest standards of artisan breadmaking.
We are thrilled to see Chef Ken Jay bring his talent to this global platform in October.
For years, Chef Ken Jay has been a master of his craft, known for his dedication to quality. His commitment to excellence is precisely why he has been a long-time user of our premium ingredients, including French flours from Minoterie Bourseau.
We are proud to announce that at the Mondial du Pain, Minoterie Bourseau flour was selected as one of the products to be used during the competition.
Whilst Chef Ken Jay is diligently preparing for the competition, Minoterie Bourseau spent a short but meaningful time working together to provide support.
Master-to-Master Guidance
In a remarkable cross-cultural collaboration, Chef Ken Jay recently had a private session with Chef Erwann Guillois, the incredibly talented R&D Chef Baker from Minoterie Bourseau.
Chef Erwann is not only a member of the prestigious Ambassadeurs du Pain but also a recent winner of the esteemed Coupe de France de la Boulangerie (French Cup 2025) with his team.
During his visit to Malaysia for a demonstration at our HQ, Chef Erwann took the time to work hand-in-hand with Chef Ken Jay. As a champion himself, Chef Erwann is dedicated to help elevate the next generation of champion bakers.
He generously shared his expertise, providing valuable tips and guidance on the best application of Minoterie Bourseau flour.
Together, they meticulously refined the recipes Chef Ken Jay will be using at the competition, focusing on optimizing every step of the process, from fermentation times to the final bake.
