"B-FADE" is a modified wheat gluten uniquely developed by MCFS Research & Development. Wheat gluten is coupled with stearoyl sodium lactate (SSL) to increase its dispersibility in the dough.

"B-FADE" can also improve dough physiology (elasticity and extensibility) and maintain softness by preventing the dough from staling.
