Whipping Cream (for ganache) 90g
White Chocolate 122g
Chestnut Puree 60g
Whipping Cream (for whipping) 200g
Salt 1g

 

CHESTNUT CREAM

 INGREDIENTS AMOUNT
Whipping Cream  200g
Chestnut Cream 120g

 

TO ASSEMBLE

You will also need some whole chestnuts, gold leaf flakes and thyme leaves.
