Baking with Cream Cheese

Remember the three bread and pastry applications we shared in our previous post that showcased the adaptability of our award-winning Prairie Farms Cream Cheese?

In this post, we will be unveiling three cheesecake recipes - two chilled, one baked:

  • Mango Cheesecake
  • Caramel Apple Baked Cheesecake
  • Matcha Lime Cheesecake

Prairie Farms Cream Cheese richness and its exceptionally smooth, milky texture makes it perfect for cheesecake. 

MANGO CHEESECAKE

This mango cheesecake comprises of a crisp tart base, that is topped with a light and airy mango yogurt cream cheese mousse, with a hidden sweet and tangy mango compote. To finish, the cake is topped with a beautiful swirls of delicate whipped cream and fresh mango pieces. 

Cream cheese, whipping cream, and yogurt - they come together with fresh mango puree, creating a lusciously light and creamy filling that is both refreshing and indulgent.

To assemble, the light, smooth and airy mango cheese mousse is piped into a silicone cake mould. 

The mango cheese layer is then topped with a circular disc of mango compote that was prepared in advance and frozen for easy handling. 

More mango cheese mousse is piped above the mango compote, before it is evened out to form the base of the cake. 

An optional but highly recommended element - the addition of almond crumble to the base for that contrasting crunch and a delicious nutty finish. 

The cakes are frozen until completely set before being demolded.

A neutral glaze is then poured over the cake to add a beautiful sheen and gloss to the cake's surface, making it look more appealing and professionally finished.

The cake is carefully transferred onto a pre-prepared, crisp tart base.

Light and airy whipped cream is piped onto the cakes.

We top our cheesecakes with fresh mango cubes for that extra pop of vibrant deliciousness!

For a touch of elegance, we delicately adorn our cheesecakes with shimmering edible gold leaf.

Imagine sinking your teeth into the luscious sweetness of fresh mango, followed by the cloud-like lightness of the cheesecake mousse, and finally, the satisfying crunch of the base! This is what we call the ultimate tropical indulgence.

CARAMEL APPLE BAKED CHEESECAKE

Crafted with our award-winning Prairie Farms Cream Cheese, this Caramel Apple Baked Cheesecake is a testament to quality and flavour.

This decadent dessert features a rich and creamy caramel-infused cheesecake, baked to golden perfection, and topped with cinnamon-spiced tender apples, and a buttery crumble topping. 

An extra drizzle of salted caramel over each slice not only enhances the flavour but also creates a visually stunning dessert that's impossible to resist.

This cake is simple yet so delicious! Now, let's bake it together!

We begin with a base of Biscoff biscuits, coarsely crumbled to offer a satisfying texture. Feel free to adjust the size of the crumble to your preference, though we find a coarser texture gives a better bite!

Pour melted butter evenly over the crumbled Biscoff biscuit base. Using a spatula, gently fold the butter into the biscuits, ensuring every piece is coated. 

Melted butter acts as a binder for our biscuit base, and should have a damp, sandy texture and easily clump together when pressed together. The base is then aside to chill as we prepare the next component - the apples!

Apples, peeled and diced, are gently simmered with caramel and a generous sprinkle of cinnamon. 

The once firm apples soften, becoming tender and infused with the caramel and cinnamon. Once the apples are cooked to tender perfection, remove from the heat and set aside to let them cool.

Next, we will prepare the cheesecake component. The cream cheese that has been brought to room temperature is whipped together with the rest of the ingredients you can find here. 

The tangy cream cheese, infused with the rich sweetness of caramel - this is perfect for salted caramel lovers! 

The creamy caramel cheesecake batter is then poured over the biscoff base that was prepared earlier and chunky apple pieces are scattered throughout.

Whether nestled within a creamy cheesecake or layered beneath a golden crumble topping, these caramel cinnamon-spiced apples are a great, versatile addition - they add a burst of flavor and a contrasting texture.

Bake the cheesecake in a water bath until set around the edges with a slight wobble in the center.

Prepare the crumble topping as the cake is baking.

Once the edges of the cheesecake have set, it's time to add the remaining layers. First, scatter the tender, cinnamon-spiced apples evenly over the surface.

Then, generously layer the entire cake with a generous addition of buttery crumble, ensuring a satisfying crunch in every bite.

We were tempted to dig into the cake right away, but we do suggest popping the cooled cheesecake into the fridge to let the cake solidify before slicing – this results in prettier slices!

The lusciously smooth and creamy texture of this cheesecake is perfectly complemented by the rich, salty caramel. Adorned with tender pieces of caramelized apple and a golden, crumbly topping - oh my!

MATCHA LIME CHEESECAKE

This Matcha Lime Cheesecake is a refreshing delight - imagine a dessert that awakens your taste buds with every bite!

Start off by preparing both the matcha and lime cheesecake batters.

Just look at how light and airy the cheesecake mousse is!

The earthy and umami notes of matcha beautifully complements the zesty tangy lime, resulting in a perfectly balanced and utterly delightful treat.

The cheesecake filling is a smooth blend of cream cheese, sugar, and whipping cream, enhanced with finely ground matcha powder as well as fresh lime juice and zest.

The crisp cookie crumble sable base is layered on with matcha and lime cheesecake.

The combination of matcha and lime creates a surprisingly delicious duo in this chilled cheesecake. The slightly bitter matcha is balanced by the zesty lime, resulting in a refreshingly complex flavor with a citrusy kick.

To finish, these cheesecake cups are topped with a small dollop of whipped cream with a light dust of matcha powder to further enhance the visual appeal and adding an extra layer of flavor.
