Chestnut's Versatility in Baking

In our previous post, we shared about chestnut being a versatile ingredient for desserts such as tarts, cakes and choux. While the chestnut is often celebrated for its role in decadent desserts, its versatility extends far beyond sweet treats.

In this post, we'll delve into how we incorporate chestnut in baked goods using our range of Roger Descours chestnut line:

  • Whole Chestnuts in Syrup
  • Chestnut Puree: Made with 100% steamed chestnut. Very smooth texture, and consist of chestnut and water only. 
  • Chestnut Paste: Smooth and velvety, and consist of 68% chestnut, sugar and water.
  • Chestnut Cream: Soft & smooth in texture, and consist of sugar, chestnuts, water, and vanilla extract. The sweetest if compared to puree & paste.

We'll showcase the making of:

Earl Grey Chestnut Bun 

Inspired by the shape of the chestnut fruit itself, the buns are rounded with a pointed tip. To complete the resemblance, roasted sesame seeds are coated on the bottom to mimic the hilum.

We infused the bread dough with Narizuka Earl Grey powder for the light brown hue and aromatic earl grey flavour, and filled the buns with sweet and nutty chestnut filling.

Let's delve into how to shape these cute chestnut-shaped buns! First off, roll out each dough ball, and place a tbsp of chestnut filling mixture.

For the chestnut filling, we used a mix of chestnut puree and chestnut cream in 1:1 ratio. For a richer chestnut flavour, we would suggest also adding either half or a whole chestnut into the bun too!

Wrap it up by shaping into a triangle, and seal the edges by pinch two angles together.

Be sure to press in the bottom edges to create a round corner.

Next, gently spray some water onto the buns then dip the wider and bottom half of the triangle into a bowl of sesame seeds.

Now your chestnut shaped buns are done, and ready to be proofed then baked! 

The sweet and nutty chestnut filling complements the earl grey flavoured buns so well. It's also really cute aesthetically and will be sure to delight both kids and adults alike!

Chestnut Galaxy

Crafted using laminated dough and filled with a luscious chestnut pastry cream and a whole chestnut, this galaxy-shaped pastry is such a stellar surprise. With its stunning appearance and delectable flavour, it's a truly out-of-this-world treat (no pun intended). 

The dough is carefully molded into a sphere, to resemble a planet. 

Each semi-sphere is filled with chestnut pastry cream, which was made by combining pastry cream with chestnut puree.

On one side of the baking tray, we also included a whole chestnut.

As the pastry bakes, the layers of the laminated dough would puff up and overflow creating a circulation indentation around the equator, creating the resemblance to a galaxy.

The flaky, buttery layers of the croissant provide a delightful texture that perfectly balances the richness of the chestnut pastry cream and the whole chestnut. It's a heavenly combination that will satisfy any sweet tooth.
