Thousand Layer Milk Bread: Crispy on the Outside, Soft on the Inside

This layered bread known as the Thousand Layer Milk Toast was quite a sensation when it went viral in Melaka town.

We decided to make our own version of it and we loved it too! The thin bread layers within is soft, fluffy and milky, with a crispy exterior. 


This Thousand Layer Milk Bread is made using the lamination method, similar to how you would croissants or danishes. 

  1. Prepare the yeast leavened bread dough
  2. Enclose the fat layer 
  3. Roll & fold the dough multiple times
  4. Shape and bake


For this recipe that we curated, we would like to highlight two of the key ingredients:

For the fat layer, we have opted to use Adeka Sweet Milk Sheet which is a low trans-fat margarine sheet that contains sugar. It has a rich milk flavour with balanced sweetness, making it ideal to use in danish, bread, danish loaf, and sweet milk rolls. 


The process of folding and turning of the dough with the Adeka Sweet Milk Sheet block is important because it laminates the dough, forming alternating fat and dough layers. 


It is the lamination that creates the many thin layers.


The dough is then cut up into squares and placed into a 250g square-shaped bread tin. Before baking, we slide on the lid.


And voila! That's how you make the Thousand Layer Milk Bread!

The milk bread layers are super soft, airy, moist, with a slightly sweet aftertaste. The thin layers can be peeled to enjoy, layer by layer.
